Tortellini Soup
Recipe from: Fox Creek Center Cookbook

1/2 lb. Italian sausage
1/2 lb. regular sausage

Cook, drain and set aside.

In a soup pot, add:
1/2 cup chopped onion
2 cloves minced garlic
1 c fresh carrots, peeled and diced
1 green pepper, diced
1 red pepper, diced
5 cups beef broth

Cook until carrots are tender.

2 cups of water
1/2 cups dry red wine
28 oz. canned diced tomatoes, drained
8 oz. tomato sauce
1/2 tsp. Dried basil
1/2 tsp dried oregano
3 Tbsp. Parsley
8 oz. cheese tortellini
Cooked sausage

Bring to a boil and simmer until the tortellini is tender (approximately 20 minutes). Serve each bowl with a sprinkle of Parmesan cheese.
